Ingredients
- 1/2 cupsourdough starter, unfed/discard
- 3/4 cupall-purpose flour
- 1/4 teaspoonsalt
- 2 tablespoonsolive oil or melted butter

In a medium bowl, combine the sourdough starter, flour, and salt. Stir in the olive oil or melted butter until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead briefly, just until smooth. Divide the dough in half.

Working with one piece at a time (keep the other covered), roll the dough very thin, about 1/16".

Lightly brush the dough with water and sprinkle with desired toppings, if desired. Some tasty options include sea salt, sesame seeds, herbs, spices, or Parmesan cheese.

Cut the dough into desired shapes using a knife, pizza cutter, or cookie cutters.

Transfer the crackers to a parchment-lined baking sheet. Bake at 400°F for 10 to 12 minutes, until golden brown.
