Classic tiramisu

Whisk the egg yolks4, vanilla sugar80g and vanilla essence1 tsp together in a bowl, over steaming hot water until pale and doubled in volume. Whisk together the mascarpone250g, double cream250ml and marsala together until thick. Whisk the two mixtures together
